Right here in Canada’s Banana Belt – sometime Sunday evening it began to snow. Paulette and I were just sitting down to watch the season ending episode of Homeland when our TV flashed a signal saying ‘lost connection with satellite – trying to establish contact.’ For the next 30 minutes or so I set about checking connections and other TV’s to see if I could figure out what was wrong – nada!!

It wasn’t until I opened our front door as I was going out to take a look and see if our satellite dish had mysteriously fallen off the roof that I got a real shock – snow was falling and we had about 3 inches of the white stuff. That solved the satellite problem as I knew right away our dish was full of snow and thus no signal. We rarely get any snow so it was naturally the last thing that entered my mind as to what the problem was.

The only good news about the snow was by the time we went to bed around 10pm the snow had stopped falling. Earlier, we had talked to friends just 30 miles south of us down in Victoria and they had no signs of snow at all. The city of Victoria seems to have a magical, invisible shield around it that mostly protects it from cold, snow and other nasty weather elements – it’s amazing!

The snow on the roads was all gone before noon so driving was no problem at all and the white stuff had melted from our satellite dish so the TV was back to normal. Our dish points up at a pretty severe angle so that’s why snow accumulates in it. There are covers that protect against this but they are so seldom needed it’s not worth the money. The snow only lasts for a day or so anyway.

When Paulette opened the tin of Condensed Milk shown above, she thought it had either gone bad or she had bought a tin of mis-tinted paint by mistake – it was ugly and she had bought 3 of them. A look at the fine print on the tin said this was ‘New’ Caramel flavored Condensed Milk! Now, what to do with 3 cans of ugly looking milk?
Paulette went on the computer to the Eaglebrand website and found a recipe for Caramel Fudge that called for only 3 ingredients – butter, brown sugar and the caramel flavored condensed milk. She said it only took 10 minutes to whip it up!

The BEST darn fudge EVER!! It tastes just like Caramels (you know those little square Caramel cubes that come individually wrapped).. only better and creamier…let me have another piece just to remind me of this delicious fudge….Yup…creamy and sweet…and delicious…the neighbours are going to love it!
To which I say: “The heck with the neighbours – bah, humbug”!!
Next – Chocolate Peanut Butter Fudge
This still left one problem though – what to do with the big bowl of chocolate chips and marshmallows that were supposed to go into making Chocolate Peanut Butter Fudge? It’s a Christmas staple in our home so the answer was 3 more tins of regular Condensed Milk so all those chocolate chips and marshmallows don’t go to waste!!
